Strippaggio offers premium extra virgin olive oils and balsamic vinegars that make everything you eat taste like a gourmet feast. Our premium 100% extra virgin olive oils are “fused” meaning the flavors (Basil, Garlic, Lemon) are crushed together with ripe olives immediately after harvesting, resulting in deeper, truer and more intense flavors and aromas. This process, called Agrumato, is not widely available in this country. Infused oils, which add the flavor after processing, just don’t taste as good.
Our premium barrel aged balsamic vinegars are sourced from Modena, Italy where up to seven different varieties of grapes are crushed, mixed with grape must, concentrated wine vinegar and fresh wine vinegar, aged in oak barrels for at least 5 years, and fermented until the taste is flawless and approved by the master vinegar maker.
What we really love to do is combine oils & balsamics into delicious dressings, marinades and vinaigrettes. Some of our favorites are Basil & Lemongrass, Lemon & Champagne, Garlic & Traditional White, Basil & Traditional Dark and Rosemary & Fig. What are your favorites?
