We have a small farm in Hana, HI where we grow our own cacao beans. My husband works at the farm, and I make the chocolate. Our chocolate is really pure. I only make 85% and 100% cacao, so very little sugar (or no sugar), and some bars are sweetened with a combination of organic fruit powders and cane sugar. We started our business after we retired, and it’s been a labor of love. Because we had very little money, we did everything ourselves, including clearing the land by hand, rather than scraping it with heavy equipment, so our soil is incredibly rich. The farm has been a healing environment for my husband, a Vietnam war veteran with PTSD. He loves farming and the peace and solitude has helped him immensely.
